A Before And After


Who doesn’t love a good before and after?  It is so awesome to see the transformation, and for me gets my creative juices flowing.

The before and after I am going to show you is not your average before and after.  I decided to be a little different.

002I bought a bad batch of apples at Walmart last week.  I was so upset because produce is crazy expensive, and the least they could do is check the fruit, or at least not throw around the bags.

Anywhoo, when I have bruised apples it means one thing.

It is time to make a pie!

My favorite pie is a chocolate pudding pie,but apple pie is a close second.

I used this recipe after searching awhile on the internet.  You can really never go wrong with a recipe from Martha.

I did not make the dough, and used about 6 apples.  I also added a little nutmeg.

The house smelled delicious while the pie was cooking.  Mr. Kell came home early, and when he saw the pie there was a smile on his face.

Now, all this talk about pie makes me eager to show the after.

Sweet Pickles


 

My mom makes some yummy sweet pickles.  That means something coming from me since I am not their biggest fan.

Here is the recipe.

Five Day Sweet Pickles

  • 4 cups vinegar
  • 1/2 cup pickling salt
  • 5 1/2 cup sugar
  • 1 1/2 tsp turmeric
  • 1 1/3 tsp pickling spice
  • 1 1/2 tsp mustard seed

Heat mixture until the sugar dissolves and add sliced cucumbers.  Place in jars and let refrigerate for 5 days.

Then eat!

I recommend eating them on top of a water cracker.  It is so delicious.

A Valentine’s Dinner


Many couples go out for Valentine’s, but I am the kind of person who would prefer to stay in. I would prefer to spend this day of love with my three girls and my husband, just hanging out in our home.  Babysitters and dinner equals $$$$$, and I am in starvation mode with my money and my food.  So, what to make for a family of 5 for Valentine’s?  Actually, to be perfectly honest, I will make the girls something easy cheesy, and save my new found cooking skills on a nice dinner for the husband and I.

Here was an idea I talked about last week.

The husband and I are crazy about seafood.  There is nothing from the sea that we will not try. For our 10 year anniversary, I steamed lobster tails, and made a yummy salad and potatoes. We sat at the kitchen table with food and drink while the girls were watching a movie in the living room.

Lobster is always a good idea.  Our local Central Market will steam it for you (given it is not busy, and you sweet talk them with a smile).

I am thinking lots of candles.  I may hit The Dollar Tree up for some white plates since mine are colorful.  Then off to Target for some flowers.  It will be beautiful.  Now, please know I will make a cute valentine table for my girls, because that is how I roll.  My mom use to do stuff like that for us all the time.

What to wear?

You are at home, and the thought of dressing up to cook and take care of your kids sound preposterous.  I know.  If you are me, you will probably be in yoga pants and will just put on a “nicer” t-shirt.  But I say get off the lazy train and try something new.

Yummy Yum Yum


I made the yummiest pot roast last night.  Holy heck it was good!

You can find the recipe here.  If you cannot tell, I am not the kinda gal who creates her own dishes.  There are enough talented people in the world to do that.  I will just cook the dishes they create and talk about them.

This was so yummy, and you are able to cook it in one pot.

The only thing I did different, was add a little beef broth just to cover the bottom of the crock pot.  The husband loved the addition of the mushrooms.  Too bad he left his lunch in the fridge, which he does 99.9% of the time.

Another meal I like to cook on a chilly night is potato soup.

*****This is where I mention that this recipe is not health savvy.  There is cheese and cream.  Amen*****

Ingredients

  • Potatoes
  • 2 stalks of celery
  • 1 onion
  • 1 clove of garlic
  • 1 can cream mushroom soup
  • 1 packet white gravy mix
  • Cheddar Cheese
  • Salt
  • Pepper
  • Bacon
  • 2 tbsp olive oil
  • Half and Half

Instructions

  1. Chop your celery, onion, and clove of garlic and saute in a pan with olive oil.
  2. While the above is getting all yummy, peel and cut up your potatoes and boil until tender with a fork. I like to cut my potatoes as cube like as possible.  If you do not want to cut potatoes, you can use a bag of hash browns.  It is just as good.
  3. Strain the potatoes leaving a cup of the potato water behind to add to the soup
  4. Add the celery, onion, garlic to the potatoes, and add the can of cream of mushroom soup.  Fill the can from the soup about 3/4 full of half and half and add to the pot.  Cook on low to medium heat.
  5.  Add the gravy mixture following the instructions per the packet.
  6. Add some cheese.  This is completely up to you.  I like alot of cheese so I start with a handful and go from there.
  7. Add potato water as needed for the consistency you like.  I like mine thick and creamy.
  8. Serve with a sprinkle of bacon and cheddar cheese, and voila!

Sometimes, I mash some of the potatoes to make it even creamier.  It is sooooooooo good.

So there you have it, my quickie potato soup.

Dinner Date


I need a date with the husband.  We have not been out to dinner with each other just the two of us in years.  Yes, I know this is sad.  Problem is we are both homebodies.  Still though, I really need to find a babysitter so we can have a dinner date.

A nice salad, some ciabatta bread, and a bottle of reisling.  This to me is heaven.

After dinner, maybe I will drag him to see this.

A Wednesday


Today was a normal day.  I did not do too much or too little.

I finally went big grocery shopping.  I made a menu and everything.

It is very difficult and expensive to buy food that is preservative free and not processed.

The picture is not very appetizing, but this was my lunch.  A tuna fish sandwich on a ciabatta roll with multi-grain chips.  I will be going back to Target tomorrow for more of that bread.  I am in heaven!

My children are little fruititarians, so I always make sure there is plenty.  The green flowers were for me!

This was my Christmas present to me.  No, it is not Le Creuset.  There is no way I could ever spend $200+  on something that cannot cook or wash itself.  I have standards.

I am in sweet kitchen love with this pot.

I bought some containers from the $1 bins at Target to organize all my papers.  I am a stacker, and it is becoming a bit ridiculous.  It will probable take me till we move to get it organized.

This is what happens when Santa buys all the Barbie and Monster High items in the metroplex.  Shame on you Santa.

Last but not least, if you are going to have a sponge, it should be a pink one.

Chicken And Dumplings


Before I talk about this yummy dish, I want to talk about this.

I went to Starbucks this morning.  I never treat myself to Starbucks. If I am going to by myself a treat, it is usually in the form of knitting needles.   What I really need to treat myself to is a new bra.  Just sayin.

That is a cheesy quote on the cup.  I like cheese.

Speaking of knitting needles, I finished this last night.

It is a Jane Richmond pattern that I bought from her etsy shop.  Finished up two others last night also.  I was on  role.  Only four  more to knit for the teachers.  I love this yarn.  I found it at Michaels.  It was on sale 2 for $9.  It is made in Canada.  I love the purple, and think a certain besty of mine is going to L-O-V-E  LOVE IT!  I just hope she skips this post and does not see it.

I once was scared of the cable stitch, but now I have mastered it.

Chicken and Dumplings is on the menu, and I am super in love.

I have memories of the husband and I eating at Applebee’s in Denton.  We were newly married, and I was in nursing school.  That is the first time I ate chicken and dumplings.

The first time I cooked it was last year.  Now, let me mention that my husband comes from a family that knows how to cook.  I mean good ole country cookin.  I am from the midwest.  Anywhoo, I attempted to make some chicken and dumplings, and I do not think the husband was impressed.  I thought it was great.  I made a dumpling with corn meal, and I think it just pissed him of.  He said they were not like any dumplings he had ever eaten.  Oh well, I am going to try again, this time with some old fashioned dumplings.

I do not like pecan pie, nor do I eat pecan pie.

To me though, I do not think that you can have Thanksgiving without it.

My husband thinks its the greatest.

A Simple Salad


My family usually has Thanksgiving dinner at my parents house.  This year, my oldest sister and her children are coming to celebrate.  They have not celebrated any holiday with us in over 20 years.  This means my mom and dad will have their four daughters and their families all under one roof.  I have a feeling my mother is over the moon about this.  I just hope everyone behaves.  I have already verbalized my warnings.

Anywhoo.

My mother makes all the basics, and my sister Lynn and I usually bring some sides.  There is usually a flavored martini or bottle of wine to be found.

I have always wanted to host a huge Thanksgiving dinner at my home.  I have visions of a huge table with Martha Stewart inspired decorations.  There would be gorgeous, but simple and rustic place settings at each seat.

We would start out with something small before the main course was served.
